

Butter Tarts
Ingredients
Pastry:
1 1/4 cups all-purpose flour
1/4 tsp salt
1/2 cup cold unsalted butter, cubed
1 egg yolk
1 tsp vinegar
Ice water
Filling:
1/2 cup packed brown sugar
1/2 cup corn syrup
1/4 cup unsalted butter, softened
1 egg
1 tsp vanilla extract
1 tbsp white vinegar
1/4 tsp salt
1/2 cup raisins or chopped pecans (optional)
Instructions
Prepare the pastry: In a bowl, mix flour and salt. Cut in cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
In a separate small bowl, whisk together egg yolk, vinegar, and just enough ice water to make 1/4 cup of liquid. Stir into the flour mixture until the dough comes together. Form into a disc, wrap in plastic, and chill for 30 minutes.
Roll out chilled dough on a lightly floured surface to about 1/8-inch thickness. Cut into 3.5-inch circles and press into a muffin tin. Chill again while you make the filling.
Make the filling: In a bowl, cream together brown sugar, corn syrup, butter, egg, vanilla, vinegar, and salt until smooth.
